Ingredients

Main Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 10.5 ounces cream of chicken soup
  • 1 cup chicken broth
  • 1 cup sour cream Can substitute with Greek yogurt for a lighter version
  • 1 cup shredded cheddar cheese
  • to taste fresh parsley, chopped For garnish

Instructions

Preparation

  • Start by placing the boneless, skinless chicken breasts in the bottom of your crockpot.
  • In a separate bowl, combine the ranch seasoning mix, cream of chicken soup, and chicken broth. Stir until well combined.
  • Pour the mixture over the chicken in the crockpot, ensuring it’s well-coated.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or on high for about 4 hours. The chicken should be tender and easy to shred.
  • About 30 minutes before serving, shred the chicken directly in the crockpot using two forks.
  • Stir in the sour cream and shredded cheddar cheese until melted and creamy.

Serving

  • Top with fresh parsley and serve it hot over rice, pasta, or with crusty bread.

Notes

Feel free to add extra vegetables like carrots or potatoes at the start of the cooking process for added nutrition. Adjust seasoning at the end, and ensure your chicken is fully submerged in the sauce during cooking for the best flavor infusion.
