  • 2 cups cooked chicken, shredded or diced (use halal chicken)
  • 1 cup seedless grapes, halved (red or green)
  • 1/2 cup mayonnaise (can use Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, finely chopped
  • 1/4 cup walnuts, chopped (optional) for crunch

  • 1 tablespoon fresh lemon juice for brightness
  • 1/4 teaspoon garlic powder (optional)

Preparation

  • Cook your chicken if not already done, by poaching or roasting. Once cooked, let it cool and shred or dice into bite-sized pieces.
  • Finely chop the celery and halve the grapes while the chicken cools.
  • In a large mixing bowl, combine mayonnaise and Dijon mustard, stirring until smooth.
  • Add the cooled chicken, chopped celery, grapes, and walnuts (if using) to the bowl. Include garlic powder for an additional flavor kick.
  • Season with salt, pepper, and lemon juice. Toss gently to ensure even coating.
  • Cover and chill the salad in the refrigerator for at least 30 minutes before serving.
  • Serve on a bed of greens, on its own, or with your favorite bread.

Notes

For substitutions, consider using Greek yogurt for half of the mayo or replacing walnuts with pecans or almonds. Let the salad rest in the fridge for the best flavor. Store leftovers in an airtight container for up to 3 days.
