Ingredients
  

Meat

  • 2 lb ground beef Use a lean mix for less fat.

Vegetables

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped (any color)

Canned Goods

  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth Use enough to reach desired consistency.

Spices

  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano

Cooking

  • In a large pot over medium heat, add the ground beef. Cook until browned, stirring occasionally to break it apart. Drain excess fat if necessary.
  • Add the diced onion, garlic, and chopped bell pepper to the pot. Cook until soft, stirring frequently, approximately 4–5 minutes.
  • Stir in the crushed tomatoes, drained kidney beans, beef broth, chili powder, cumin, salt, pepper, and oregano. Mix well.
  • Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for at least 30 minutes, stirring occasionally to prevent sticking. Taste and adjust seasoning as needed.

Notes
