  • 2 cans butter beans (15.5 oz each), drained and rinsed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red chili flakes (optional) for a touch of heat
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish
  • to taste Lemon wedges for garnish

Preparation

  • In a medium-sized skillet, heat the olive oil over medium heat until hot but not smoking.
  • Add the minced garlic to the skillet and sauté for about 30 seconds or until fragrant, being careful not to let it brown.
  • Stir in the diced tomatoes, dried oregano, and basil. Let it shimmer and meld for about 2-3 minutes.
  • Gently fold in the butter beans and allow them to soak up the flavors while cooking for another 5 minutes, stirring occasionally.
  • Add salt, pepper, and red chili flakes for heat, stir, and let cook for an additional 2-3 minutes.
  • Remove from heat and serve warm, garnished with fresh parsley and lemon wedges.

Notes

Feel free to swap butter beans with chickpeas or cannellini beans. Increase sauté time for more depth of flavor, but avoid burning. Let it sit for a few minutes post-cooking for flavors to develop. Leftovers can be refrigerated in an airtight container for up to 3-4 days or frozen for a month. Reheat on low heat, adding water or broth if necessary.
