  • 1 cup long-grain rice Rinse before cooking.
  • 1 cup coconut milk Use full-fat for creaminess.
  • 1 cup water
  • 1 unit lime (zested and juiced) Fresh lime juice for best flavor.
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional) Balances the flavors.
  • to taste sprinkle toasted coconut flakes for garnish (optional) For added texture and flavor.

Instructions
 

Preparation

  • Rinse your long-grain rice under cool, running water to remove excess starch.
  • In a medium-sized saucepan, add the rinsed rice, coconut milk, water, salt, sugar (if using), lime zest, and lime juice.

Cooking

  • Bring the mixture to a gentle boil over medium heat.
  • Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 18-20 minutes until the rice has absorbed all of the liquid.
  • Remove the pot from heat, and let it sit (still covered) for another 5 minutes.

Serving

  • Fluff the rice with a fork and garnish with toasted coconut flakes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to a month. Reheat with a splash of water or coconut milk.
