Ingredients
  

For the base

  • 1 cup all-purpose flour, sifted For a lighter texture
  • ½ cup unsweetened shredded coconut For that tropical crunch
  • ½ cup butter, softened To bring the right richness
  • ¾ cup brown sugar For a sweet caramel-like flavor
  • 2 large eggs Binding the ingredients together

For the filling

  • 1 cup crushed pineapple, drained For the best consistency
  • ½ teaspoon vanilla extract Adds depth to the flavor
  • 1 teaspoon baking powder For that perfect rise

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease an 8x8-inch baking dish for easy bar removal.
  • In a bowl, combine the softened butter and brown sugar. Beat until light and creamy.
  • Add the eggs one at a time, blending well after each addition.
  • In a separate bowl, mix the flour and baking powder, then gradually incorporate it into the wet mixture.
  • Stir well until fully combined.
  • Fold in the shredded coconut and crushed pineapple until evenly distributed.
  • Pour batter into the prepared baking dish and smooth the top with a spatula.
  • Bake for about 25 minutes, or until the top is golden brown and a toothpick comes out clean.
  • Let it cool for at least 15 minutes before cutting into bars.

Notes

For a vegan version, replace eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water). Store bars in an airtight container at room temperature for up to 5 days or freeze wrapped in plastic for up to 3 months.
