Ingredients
  

For the filling

  • 1 lb fresh spinach Can substitute with frozen spinach if needed.
  • 1 cup feta cheese, crumbled Adds tangy creaminess to the filling.
  • 1 small onion, finely chopped Adds depth and sweetness.
  • 2 cloves garlic, minced For aromatic flavor.
  • 2 tablespoons olive oil To sauté the onions and garlic.
  • 1 to taste salt and pepper Basic but essential seasonings.
  • 1 egg, beaten for brushing Gives a golden finish to the pastries.

For the pastry

  • 1 package (16 oz) phyllo pastry The crisp, flaky exterior.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until fragrant and onions are translucent (about 4-5 minutes).
  • Stir in fresh (or thawed and drained frozen) spinach and cook until wilted (about 2-3 minutes). Remove from heat.
  • In a mixing bowl, combine sautéed spinach mixture with crumbled feta cheese. Season with salt and pepper to taste. You can add the beaten egg for a richer filling.

Assembly

  • Unroll the phyllo pastry and place one sheet on a clean surface. Brush lightly with olive oil and place another sheet on top. Repeat for 2-3 layers.
  • Cut the layered phyllo into strips (about 3 inches wide). Place a tablespoon of spinach filling at one end of each strip. Fold the pastry over the filling diagonally to form a triangle shape, keeping folding in a triangular pattern until you reach the end. Seal edges with water or more oil.

Baking

  • Place filled triangles on a baking sheet lined with parchment paper. Brush tops with beaten egg. Bake in preheated oven for about 20-25 minutes, or until crisp and browned.
  • Allow triangles to cool slightly before serving.

Notes

Keep unused phyllo covered with a damp towel to prevent drying. Use well-drained frozen spinach to avoid sogginess. Customize the filling with other ingredients if desired. Check pastries in the oven to adjust cooking time as necessary.
