Ingredients
  

For the Cake

  • 2 cups fresh blueberries Reserve some for topping
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Cream Topping

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for cream

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the eggs one at a time, ensuring they’re fully incorporated before adding the next. Stir in 1 teaspoon of vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the butter-sugar-egg mixture, alternating with the sour cream. Start and end with the dry ingredients.
  • Fold in 1 and 1/2 cups of fresh blueberries.
  • Evenly spread the batter into the prepared baking pan and sprinkle the remaining blueberries on top.

Baking

  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Preparation of Cream Topping

  • In a mixing bowl, whip the heavy cream with powdered sugar and remaining vanilla extract until soft peaks form.
  • Spread the whipped cream over the cooled cake, or serve it by the slice with a dollop of whipped cream.

Notes

For gluten-free, substitute all-purpose flour with a gluten-free blend. Fresh blueberries are recommended for best flavor.
