  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Invest in good-quality butter for better flavor.
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract Use good-quality vanilla for better flavor.
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  • In a separate large mixing bowl, beat the softened butter and granulated sugar together until fluffy and light in color.
  • Incorporate the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry mixture to the butter mixture, alternating with the milk, and mix until just combined—don’t overmix!

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cooling and Serving

  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Pair the cake with fresh whipped cream, fruit preserves, or vanilla ice cream. Best enjoyed with a cup of Earl Grey tea or Irish breakfast tea.
