Main Ingredients

  • 2 pounds Potatoes, peeled and cut into chunks Starchy potatoes like Russets work best.
  • 4 links Irish sausages (of your choice) Opt for high-quality sausages for the best flavor.
  • 4 tablespoons Butter, preferably unsalted Add more for extra creaminess.
  • 1/2 cup Milk, whole or your preference Buttermilk can provide a richer flavor.
  • to taste Salt
  • to taste Pepper
  • optional Gravy, for serving Can use a quick pan gravy made from sausage drippings.
  • to taste Chopped Parsley, for garnish Adds a fresh touch.

Instructions

Cooking the Sausages

  • In a large skillet, heat a splash of oil over medium heat. Add your sausages, cooking until brown on all sides and cooked through (about 12-15 minutes). Take them out and keep warm.

Preparing the Potatoes

  • While the sausages are cooking, place the potatoes in a large pot and cover them with cold water. Bring to a boil, add a pinch of salt, and let simmer until fork-tender (around 15-20 minutes).

Making the Mash

  • Once the potatoes are cooked, drain them well. In the same pot, add butter, milk, salt, and pepper. Mash until smooth and creamy.

Serving

  • Plate a generous scoop of mashed potatoes, place the sausages on top, and drizzle with gravy if desired. Finish with a sprinkle of chopped parsley for a fresh touch.

Notes

Consider pairing with steamed green beans or a garden salad. Enjoy with a pint of stout or an Irish cider. Store leftovers in an airtight container for up to three days; reheat on the stovetop with a splash of milk.
