  • 6 large large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated cheese such as mozzarella or feta
  • 1/4 cup milk

  • 1 tablespoon olive oil
  • optional fresh herbs (basil or parsley) for garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
  • Heat the olive oil in a large, oven-safe skillet over medium heat.
  • Sauté the chopped spinach and halved tomatoes in the skillet until the spinach wilts, approximately 2-3 minutes.
  • Pour the egg mixture over the sautéed vegetables in the skillet.
  • Evenly sprinkle the grated cheese over the top.

Cooking

  • Let the frittata cook on the stovetop for about 5 minutes.
  • Carefully place the skillet in the preheated oven.
  • Bake for 15-20 minutes until the frittata is golden and the center is set.
  • Remove from the oven and allow to cool slightly before slicing.

Notes

Serve with a light mixed greens salad or crusty bread, and pair with beverages like fresh-squeezed orange juice.
