  • 3 tablespoons olive oil Can be adjusted to taste.

Preparation

  • Wash the cherry tomatoes and cucumber thoroughly.
  • Halve the cherry tomatoes and dice the cucumber into bite-sized pieces.
  • In a large bowl, combine the halved cherry tomatoes, diced cucumber, and mozzarella balls.
  • Tear the fresh basil leaves and sprinkle them over the salad.
  • Drizzle olive oil and balsamic vinegar over the salad and toss gently to combine.
  • Add salt and pepper to taste and give the salad one last gentle toss.
  • Serve immediately, or chill for a short while if preferred.

Notes

Best enjoyed fresh. Store leftovers in an airtight container for 1-2 days and avoid mixing in dressing until serving to keep the cucumbers crisp.
