  • 1 pie crust 1 pre-made pie crust Store-bought for convenience
  • 2-3 medium medium tomatoes, sliced Use fresh and ripe tomatoes for the best flavor
  • 1 cup fresh basil leaves Use fresh basil for maximum flavor
  • 4 oz goat cheese, crumbled Feta or ricotta can be used as substitutes
  • 1 tbsp olive oil For drizzling over the filling
  • to taste Salt and pepper Season to your preference
  • 1 egg egg (for egg wash) Whisked for a golden crust

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Unroll your pre-made pie crust and place it on a parchment-lined baking sheet.
  • Slice the tomatoes evenly.
  • Layer the sliced tomatoes on the crust, leaving about 1-2 inches from the edges. Spread the basil leaves and crumbled goat cheese evenly over the tomatoes.
  • Drizzle olive oil over the filling and sprinkle with salt and pepper.
  • Gently fold the edges of the crust over the filling to create a pleated design.
  • Whisk the egg and brush it over the crust.

Baking

  • Bake the galette in the oven for 35-40 minutes, or until the crust is golden and the tomatoes are tender.
  • Allow to cool for a few minutes before slicing. Serve warm or at room temperature.
