  • 3-4 medium medium tomatoes, sliced
  • 1 cup fresh basil leaves
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 egg for egg wash
  • Salt and pepper to taste

  • 1 pie crust store-bought or homemade

Preparation

  • Preheat your oven to 400°F (200°C) to ensure a perfectly baked galette.
  • Roll out your pie crust on a lightly floured surface until it reaches about ¼ inch thick and can comfortably fit on a baking sheet. Transfer it onto a parchment-lined baking sheet.
  • Arrange the sliced tomatoes in the center of your crust, leaving about a 2-inch border. Sprinkle salt and pepper on the tomatoes to enhance their flavor.
  • Scatter the shredded mozzarella cheese over the tomatoes and then layer on the fresh basil leaves.
  • Fold the edges of the crust over the filling, creasing as needed, to create a rustic border. Brush the crust with an egg wash for a beautiful golden finish.

Baking

  • Place the galette in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbling.

Serving

  • Let it cool slightly before slicing. Serve warm and enjoy.
