  • 1 cup unsalted butter, softened Make sure to use unsalted butter for the best flavor.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup toffee bits (such as Skor or Heath) You can also substitute with chocolate chips or chopped nuts.

Preparation

  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). You can use a hand mixer or a stand mixer for this step.
  • Add in the vanilla extract and mix briefly.

Mixing Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the butter-sugar mixture, stirring until just combined.

Add Toffee Bits

  • Fold in the toffee bits gently using a spatula until evenly distributed throughout the dough.

Chill the Dough

  • Divide the dough into two equal portions. Shape each portion into a log about 2 inches in diameter.
  • Wrap each log tightly in plastic wrap and chill in the refrigerator for at least 2 hours or overnight for the best flavor.

Bake the Cookies

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Remove one log from the fridge and slice it into 1/4-inch thick rounds.
  • Lay the cookies onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden brown but the centers are still soft.
  • If desired, sprinkle a touch of sea salt over the warm cookies immediately after removing them from the oven.

Cooling

  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
