  • 2 packs Ladyfingers (about 28-30 pieces)
  • 1 cup Coffee, cooled (strong brewed coffee works best)
  • 16 oz Mascarpone cheese (about 2 cups)
  • 1 cup Heavy whipping cream
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • to taste Unsweetened cocoa powder (for dusting)
  • to taste Chocolate shavings (optional for topping)

Preparation

  • Brew 1 cup of strong coffee and let it cool.
  • In a large bowl, combine the mascarpone cheese, sugar, and vanilla extract. Use an electric mixer until the mixture is smooth and well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Then, gently fold the whipped cream into the mascarpone mixture until combined.
  • Quickly dip each ladyfinger into the cooled coffee, ensuring not to oversoak them. They should be moist but not falling apart.
  • In a rectangular dish or cake pan, start layering. Place a single layer of soaked ladyfingers at the bottom, followed by half of the mascarpone mixture. Repeat with another layer of ladyfingers, finishing with the remaining mascarpone on top.
  • Cover the dish with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld and the cake to set.
  • When ready to serve, dust the top liberally with cocoa powder and add chocolate shavings if desired. Cut into squares and enjoy!

Notes

Ensure all ingredients are Halal-compliant. Store leftover cake in the refrigerator for up to 3 days or freeze for up to a month. Thaw overnight before serving. Always top with fresh cocoa powder for best flavor.
