Ingredients
  

Fresh Ingredients

  • 4 cups mixed leafy greens (spinach, arugula, and romaine)
  • 1 unit cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 unit red bell pepper, diced
  • 1 unit yellow bell pepper, diced
  • ½ unit red onion, thinly sliced
  • 1 unit avocado, diced
  • ½ cup feta cheese, crumbled
  • ¼ cup walnuts or almonds, chopped

Dressing

  • ¼ cup olive oil adjust to taste
  • 1 unit juice of 1 lemon adjust to taste
  • to taste salt and pepper

Instructions
 

Preparation

  • Start by washing all your leafy greens thoroughly. Spin dry or pat them down with a clean kitchen towel.
  • Slice your cucumber, halve the cherry tomatoes, and dice the bell peppers. Thinly slice the red onion.

Combining Ingredients

  • In a large bowl, combine the mixed greens, cucumber, tomatoes, bell peppers, and red onion. Toss to mix evenly.
  • Gently fold in the diced avocado and crumbled feta cheese while keeping the avocado pieces intact.

Adding Crunch and Dressing

  • Sprinkle the chopped walnuts or almonds on top of the salad.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle over the salad.

Serving

  • Gently toss the salad to coat everything in the dressing and serve fresh.

Notes

For added variation, try using different leafy greens or adding hummus/Greek yogurt instead of avocado. Serve immediately for the best freshness.
