The Softest Potato Rolls Ever

  • 2 cups mashed potatoes (preferably leftover)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (softened)
  • 1 teaspoon salt
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 4 cups all-purpose flour (more for dusting)
  • 1 cup warm milk (110°F)
  • 1 piece egg (lightly beaten)

Preparation

  • If you don’t have leftover mashed potatoes, boil 2-3 medium potatoes until tender. Mash them with a bit of butter and remove any lumps. Allow to cool.
  • In a large mixing bowl, combine the warm milk, sugar, and yeast. Allow it to sit for about 5 minutes until foamy.
  • Add the mashed potatoes, softened butter, and salt to the yeast mixture. Mix well.
  • Gradually add the flour, one cup at a time, mixing until the dough begins to pull away from the sides of the bowl.
  • Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm area for about 1 hour, or until doubled in size.

Baking

  • Once risen, punch the dough down gently. Divide it into 12-16 pieces, shape into rolls, and place them in a greased 9x13 inch baking dish.
  • Cover the rolls with the towel again and let rise for another 30 minutes until puffed.
  • Preheat your oven to 350°F and bake the rolls for 20-25 minutes or until golden brown.
  • Let the rolls cool slightly before serving. Enjoy them warm with butter!

Notes

Don't rush the rising process for the best texture. You can experiment with flavors by adding herbs like rosemary or garlic for a twist.
