  • 1 tablespoon baking powder

  • 1 cup fresh strawberries, hulled and diced Use fresh for the best results.
  • 1/2 cup heavy cream Can substitute with plant-based cream.
  • 1 teaspoon vanilla extract
  • 1 splash lemon juice Optional, enhances flavor.

Preparation

  • Preheat your oven to 400°F (200°C) to ensure it’s nice and hot when your scones are ready to bake.
  • In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  • Add the chilled, cubed butter. Using a pastry cutter or your hands, mix it until the mixture resembles coarse crumbs.
  • Gently fold in the diced strawberries, being careful not to crush them.
  • In a small bowl, mix together the heavy cream and vanilla extract. If you’re using lemon juice, add it now.
  • Pour the wet ingredients into the dry mixture and stir until just combined. The batter may be sticky, which is perfect for tender scones.
  • Turn the mixture onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into wedges or use a biscuit cutter for round scones.

Baking

  • Place the scones on a lined baking sheet. Brush the tops with a little extra cream and sprinkle with sugar.
  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Allow the scones to cool on a wire rack. Serve warm, possibly with some whipped cream or fruit preserves.

Notes

Use fresh strawberries for the best flavor. Chill your butter to achieve a flaky texture. Don’t overmix the dough and feel free to experiment with flavors like lemon zest or different fruits.
