Ingredients
  

Dry Ingredients

  • 1 cup almond flour You can substitute with oat flour or whole wheat flour.
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup unsweetened applesauce

Add-ins

  • 1/2 cup dark chocolate chips Optional.
  • 1/4 cup chopped nuts Optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the almond flour, protein powder, baking soda, and salt. Stir well to ensure an even mix.
  • In a separate bowl, whisk together the honey (or maple syrup) and applesauce until smooth.
  • Gradually add the wet mixture into the dry ingredients, stirring until just combined. If using, fold in the dark chocolate chips and nuts.
  • Using a tablespoon, drop the batter onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are golden. The centers may appear slightly soft but will firm up as they cool.

Cooling

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Best served with almond milk or nut butter. Can be stored at room temperature for up to 5 days, in the fridge for up to a week, or frozen for up to three months. Reheat in the microwave for 10-15 seconds.
