For the filling

  • 6 cups fresh peaches, sliced Use ripe peaches for the best flavor.
  • 1/2 cup sugar Divided into two parts for the filling and batter.
  • 1 teaspoon cinnamon Adjust to taste for a stronger flavor.
  • 1 tablespoon lemon juice To enhance the flavor of the peaches.

For the batter

  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 cup butter, melted Ensure it's cooled slightly before adding.
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Toss gently and set aside.
  • In another bowl, mix the remaining sugar, flour, baking powder, and salt. Gradually add the milk and melted butter, stirring until you have a smooth batter.

Baking

  • Pour the batter into a greased 9×13-inch baking dish. Spoon the peach mixture over the top without stirring.
  • Place in the preheated oven and bake for about 40-45 minutes, or until the top is golden brown and the peach juices are bubbling.

Serving

  • Allow the cobbler to cool slightly before serving warm. Pair with vanilla ice cream or whipped cream.

Notes

If using canned or frozen peaches, drain well. For extra crunch, mix in 1/4 cup of rolled oats into the batter. Avoid overmixing to keep batter light and fluffy.
