Ingredients
  

For the Pie Crust

  • 2 ½ cups all-purpose flour For the crust.
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup unsalted butter, chilled and diced Use chilled for best results.
  • 6-8 tbsp ice water To bind the crust.

For the Apple Filling

  • 6-8 cups apples, peeled, cored, and sliced (a mix of Granny Smith and Honeycrisp works best!) Use a mix for best flavor.
  • ¾ cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon For spice.
  • ¼ tsp nutmeg For flavor.
  • 1 tbsp lemon juice To enhance flavor.
  • 1 tbsp butter, to dot To add richness.

Instructions
 

Prepare the Pie Crust

  • In a large bowl, combine the flour, salt, and sugar.
  • Add the diced butter and mix until it resembles coarse crumbs.
  • Stir in the ice water, a tablespoon at a time, until the mixture forms a ball.
  • Divide in half, flatten into disks, wrap in plastic, and refrigerate for at least 4 hours.

Make the Apple Filling

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice. Set aside.

Assemble the Pie

  • Roll out one disk of dough on a floured surface to fit your pie pan. Place it in the pan.
  • Fill the crust with the apple mixture and dot with butter.
  • Roll out the second disk of dough and place it over the filling. Seal the edges and cut slits for steam to escape.

Bake the Pie

  • Bake in the preheated oven for 15 minutes.
  • Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the apples are soft and the crust is golden brown.

Cool and Serve

  • Allow the pie to cool for at least two hours before serving.
