  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth Can substitute with vegetable broth for a lighter version.
  • 1 can (14.5 oz) diced tomatoes Include juices for added flavor.
  • 1 cup green beans, chopped Fresh or frozen can be used.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup pasta or rice (optional) Adjust cooking time according to package instructions.

Preparation

  • In a large pot over medium heat, add the ground beef and cook until browned. Break up the meat into small pieces as it cooks.
  • Once the beef is browned, drain any excess fat if necessary. Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté for about 5-7 minutes until the vegetables are tender.
  • Pour in the beef broth and add the can of diced tomatoes (with juices). Stir well to combine, and let it come to a simmer.
  • Stir in the green beans, dried oregano, and thyme. Season with salt and pepper to taste. Let the soup simmer on low heat for an additional 10-15 minutes.
  • If using pasta or rice, stir it in before serving and adjust cooking time according to package instructions.
  • Ladle the soup into bowls and enjoy its comforting flavors with family and friends!

Notes

The soup can be stored in the refrigerator for 3 to 4 days or in the freezer for up to 3 months. Reheat gently on the stovetop over low heat.
