  • 1 pound ground beef Use lean ground beef for less fat.
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • In a large pot over medium heat, drizzle a little olive oil to coat the bottom of the pot. Once heated, add the chopped onions and garlic. Sauté until they’re soft and fragrant, about 3-5 minutes.
  • Add the ground beef to the pot. Cook until the meat is browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.
  • Toss in the chopped green bell pepper and stir everything together for a couple of minutes until the bell pepper begins to soften.
  • Sprinkle in the chili powder, cumin, and paprika. Mix well, letting the spices bloom for about 1 minute.
  • Stir in the crushed tomatoes, red kidney beans, and black beans. Season with salt and pepper to your taste.
  • Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 20-30 minutes, stirring occasionally.
  • Once thickened and delicious, give it a taste and adjust seasoning if needed. Serve hot with your favorite toppings!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to three months. Reheat on the stove, adding a splash of water or broth if it thickens too much.
