Ingredients
  

For the marinade

  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Fresh Thyme (or 1 teaspoon dried) Can substitute with oregano or basil
  • 1 tablespoon Paprika Adds smokiness
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Honey or Maple Syrup A touch of sweetness

For the chicken

  • 4 pieces Boneless Skinless Chicken (about 1.5 lbs)

Preparation

  • Rinse the chicken pieces under cold water and pat them dry with paper towels.
  • In a bowl, combine olive oil, lemon juice, minced garlic, thyme, paprika, salt, pepper, and honey or maple syrup. Whisk until well blended.
  • Place the chicken in a resealable bag or a shallow dish and pour the marinade over the chicken, ensuring every piece is well-coated.
  • Seal the bag or cover the dish, then refrigerate for at least 30 minutes, ideally 2 to 4 hours.

Cooking

  • Grill, bake, or pan-sear the chicken to your desired doneness, typically about 6-8 minutes per side on the grill.
  • Ensure the internal temperature reaches 165°F (75°C).
  • Allow to rest for a few minutes before serving to keep the chicken juicy.

Notes

For maximum flavor, let it marinate ideally overnight. Avoid over-marinating to prevent mushy texture. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
