  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped

  • 6 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained

Seasoning

  • 1 teaspoon dried thyme

Preparation

  • Wash and chop your vegetables, ensuring you have everything ready to go.

Sautéing

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.

Cooking the Vegetables

  • Add sliced carrots and chopped celery to the pot. Stir and let cook for about 3-4 minutes.
  • Gradually add in the chopped cabbage, stirring until it starts to wilt.

Adding Liquid

  • Pour in vegetable broth and diced tomatoes (with their juice). Stir everything together and bring to a boil.

Seasoning and Simmering

  • Add dried thyme and season with salt and pepper to taste. Reduce heat to low, cover the pot, and let the soup simmer for 25-30 minutes, or until vegetables are tender.
