Main Ingredients

  • 2 cups cooked jasmine rice preferably day-old for the best texture
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 medium onion chopped
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 eggs beaten
  • 3 tablespoons soy sauce make sure it's Halal-certified
  • 2 green onions chopped
  • Salt and pepper to taste

Preparation

  • If using freshly cooked rice, spread it out onto a baking sheet and refrigerate for about 30 minutes to cool and firm up.

Cooking Shrimp

  • In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat.
  • Add the shrimp and season with salt and pepper. Cook until they turn pink and opaque, about 2-3 minutes.
  • Remove the shrimp and set aside.

Sautéing Aromatics

  • In the same pan, add another tablespoon of oil. Sauté the minced garlic and chopped onion for about 2 minutes or until fragrant and softened.

Add Vegetables

  • Toss in your mixed vegetables, stirring occasionally, until they are tender and vibrant, about 3-4 minutes.

Incorporating Rice

  • Now, add the cooked jasmine rice and the beaten eggs to the pan. Stir everything together, ensuring the rice gets heated thoroughly and the eggs are fully cooked.

Final Touches

  • Pour in the soy sauce and add the cooked shrimp back into the pan.
  • Mix everything well, cooking for another 2 minutes.
  • Finally, sprinkle with chopped green onions for a fresh finish.

Serve

  • Plate your Thai Shrimp Fried Rice and enjoy warm!

Notes

To achieve the best results, use day-old rice. You can customize the dish by substituting shrimp with chicken, tofu, or other vegetables.
