Ingredients
  

For the Dough

  • 2 cups all-purpose flour
  • ½ cup hot water
  • A pinch of salt salt

For the Filling

  • 1 cup chicken or vegetable broth
  • 1 cup ground chicken or tofu
  • 2 tablespoons red Thai curry paste
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, minced
  • To taste Fresh basil or cilantro (for garnish)

Instructions
 

Preparation

  • In a mixing bowl, combine the flour and salt. Gradually add hot water while stirring until a dough starts to form. Knead the dough for 5-7 minutes until smooth. Let it rest for 30 minutes.
  • In a saucepan, combine chicken or vegetable broth, ground chicken or tofu, red Thai curry paste, soy sauce, and ginger. Cook over medium heat until the filling is cooked through and flavorful. Let it cool.

Assembly

  • Roll out the rested dough on a floured surface until thin. Cut into circles (about 3 inches in diameter) using a glass or cookie cutter.
  • Place a teaspoon of filling in the center of each circle. Carefully fold the dough over the filling, crimping the edges to seal.

Cooking

  • Steam the dumplings in a steamer basket for about 12-15 minutes until fully cooked.
  • Serve hot, garnished with fresh basil or cilantro. Squeeze some lime juice on top for an extra zing!

Notes

To ensure your dumplings come out perfect, aim for a smooth but not sticky dough texture. Ensure the filling is well-seasoned and seal the dumplings tightly. Avoid overcrowding the steamer to ensure proper cooking.
