  • 1 cup teriyaki sauce Store-bought or homemade
  • 1 cup pineapple chunks
  • 1 whole bell pepper, sliced Any color bell pepper works
  • 1 whole onion, sliced
  • Salt and pepper to taste
  • Aluminum foil For wrapping

Preparation

  • Preheat your grill or oven to medium-high heat.
  • Cut two large sheets of aluminum foil.
  • Place one chicken breast in the center of each sheet.
  • Pour half of the teriyaki sauce over each chicken breast.
  • Top with pineapple chunks, sliced bell pepper, and onion.
  • Season with salt and pepper.
  • Fold the foil over to create packets, sealing them tightly.

Cooking

  • Place the packets on the grill or in the oven and cook for 20-25 minutes, until the chicken is cooked through.
  • Carefully open the packets, being cautious of the steam, and serve hot.

Notes

Serve the packets hot over rice or noodles for a complete meal. For enhanced flavor, add extra teriyaki sauce or garnish with sesame seeds. Store leftovers in an airtight container in the refrigerator for up to three days.
