  • 4 large onions, thinly sliced Preferably yellow or sweet onions.
  • 2 cups shredded cheddar cheese Can experiment with different cheeses.
  • 1 cup heavy cream Can substitute with half-and-half for a creamier texture.
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs like thyme or parsley for garnishing Optional.

Preparation

  • Begin by thinly slicing the onions, ensuring uniform thickness for even cooking.

Cooking

  • In a large skillet over medium heat, combine butter and olive oil. Once hot, add the sliced onions and season them with salt. Cook for about 20-25 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  • Reduce the heat to low and pour in the heavy cream, stirring to coat the onions well. Allow it to simmer for another 5 minutes.
  • Preheat your oven to 375°F (190°C). Transfer the onion mixture into a baking dish and sprinkle shredded cheddar cheese evenly on top.
  • Place the dish in the oven and bake for about 15 minutes or until the cheese is melted and bubbly. Optionally, broil for an extra 2-3 minutes for a crispy top.

Serving

  • Remove from the oven, garnish with fresh herbs if desired, and serve hot.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in the oven at 350°F (175°C) until warmed through, avoid microwaving to maintain texture.
