  • 1 whole lemon (juiced and zested)

Preparation

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until they float to the top, usually about 3-5 minutes. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
  • Add the shrimp to the skillet, season with salt and pepper, and cook for approximately 2-3 minutes or until they turn pink and opaque.
  • Squeeze the juice of one lemon over the shrimp and add the lemon zest. Stir to combine.
  • Add the cooked tortellini into the skillet with the shrimp and toss everything gently to coat in the lemon garlic sauce.
  • Remove from heat and garnish with fresh parsley. Serve immediately.
