Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Arrange the tostada shells on a baking sheet and bake for about 5-7 minutes until crisp.
  • While baking, shred the rotisserie chicken into bite-sized pieces, seasoning with salt, pepper, and lime juice.
  • Chop the lettuce, dice the tomatoes, and slice the avocado. Place these toppings in separate bowls for easy assembly.

Assembly

  • Once the tostada shells are ready, layer on the shredded lettuce followed by the shredded chicken.
  • Sprinkle diced tomatoes and shredded cheese over the chicken.
  • Top each tostada with a dollop of sour cream or yogurt, sliced jalapeños, and fresh avocado.
  • Garnish with cilantro if desired and serve with salsa on the side.

Notes

For extra crunch, ensure tostada shells are not overcrowded while baking. Feel free to experiment with different rotisserie chicken flavors and toppings like corn or pickled onions for added variety.
