Casserole Base

  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 1 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 can cream of chicken soup Can be substituted with homemade cream sauce for healthier options.
  • 1 cup shredded cheese (your favorite variety) Choose a cheese that melts well.
  • 1/2 cup butter, melted Used for mixing with crackers.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper

Topping

  • 1 cup crushed buttery crackers Used for the topping to add crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  • Gently fold in the shredded cheese until evenly distributed.
  • Grease a 9x13 inch baking dish lightly with cooking spray or butter and pour the chicken mixture into the dish, spreading it out evenly.
  • In a separate bowl, mix crushed buttery crackers with melted butter until thoroughly coated.
  • Evenly sprinkle the buttery cracker mixture over the chicken layer.

Baking

  • Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  • Allow the casserole to cool for a few minutes before serving.

Notes

For a lighter version, try using Greek yogurt instead of sour cream or low-fat cheese. Store leftovers in the fridge for 3-4 days or freeze for up to 2 months. Reheat by thawing overnight and warming in the oven.
