  • 1 piece lemon, sliced
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Drizzle 1 tablespoon of olive oil in a baking dish, spreading it evenly.
  • Place your fish fillets in the dish and season with salt, pepper, and dried oregano, gently rubbing to coat.
  • Sprinkle minced garlic over the fish, then arrange the halved cherry tomatoes and lemon slices around them.
  • Drizzle remaining olive oil over the fish and toppings.
  • Bake in the preheated oven for 20-25 minutes until the fish flakes easily.
  • Sprinkle fresh chopped parsley on top before serving.
  • Plate the fish alongside your favorite side and enjoy.

Notes

For substitutions, consider using salmon or tilapia. To store leftovers, use an airtight container and refrigerate for up to 2 days or freeze for up to 3 months. Reheat in the oven covered with foil.
