  • 1 cup creamy peanut butter

  • 2 cups puffed rice cereal
  • 2 cups miniature marshmallows
  • ½ cup chocolate chips Optional, for topping

Preparation

  • Start by greasing an 8×8 inch baking pan with a little cooking spray, or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the peanut butter and honey (or maple syrup). Microwave them in 30-second intervals, stirring between each until melted and smooth.
  • Once melted, add the puffed rice cereal to the peanut butter mixture. Stir gently until all cereal pieces are well coated.
  • Carefully fold in the miniature marshmallows into the mixture. Be gentle, so they don’t melt too much.
  • Pour the mixture into the prepared baking dish, pressing down firmly with a spatula or your hands to create an even layer.
  • If you are using chocolate chips, sprinkle them on top while the mixture is still warm, allowing them to melt slightly and adhere.
  • Let the bars cool at room temperature for about an hour, or pop them into the refrigerator for quicker setting.
  • Once cooled and set, slice them into squares and serve.

Notes

For perfect bars, let them cool completely before slicing. You can substitute peanut butter with almond or cashew butter if allergies are a concern. Add a pinch of salt or cinnamon for extra flavor.
