  • 4 cups all-purpose flour
  • 2 cups warm water Should be around 100°F (37°C)
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 2 teaspoons active dry yeast Ensure it's fresh

  • 1 tablespoon olive oil For greasing the bowl

Preparation

  • In a small bowl, combine the warm water, sugar, and yeast. Allow this mixture to sit for about 5-10 minutes until it becomes foamy.
  • In a large mixing bowl, add the flour and salt. Mix them together until they are well combined.
  • Pour the yeast mixture into the bowl with the dry ingredients. Using a wooden spoon or your hands, mix until a rough dough starts to form.
  • Transfer the dough onto a floured surface and knead for about 8-10 minutes, until it becomes smooth and elastic.
  • Grease a clean bowl with olive oil and place the dough inside, covering it with a damp cloth. Let the dough rise in a warm environment for about 1 hour, or until it doubles in size.

Baking

  • After the dough has risen, punch it down and transfer it to a floured surface again. Shape it into a round or oval loaf according to your preference.
  • Place the shaped dough on a baking sheet lined with parchment paper. Cover it again with the cloth and let it rise for another 30 minutes.
  • While waiting, preheat your oven to 450°F (230°C).
  • Before placing your bread in the oven, make a few slashes on the top to allow steam to escape. Bake for about 25-30 minutes or until the crust is golden-brown and sounds hollow when tapped.
  • Carefully transfer the bread to a wire rack to cool completely before slicing.

Notes

For an extra-crusty exterior, place a baking dish filled with water at the bottom of your oven while the bread bakes. That creates steam enhancing crispness. Store leftovers in a paper bag at room temperature.
