  • 1 cup glutinous rice flour
  • 1 cup sugar
  • 1 cup coconut milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded coconut (optional) Add for extra texture and flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the glutinous rice flour, sugar, baking powder, and salt. Make sure there are no clumps.
  • In another bowl, combine the melted butter, coconut milk, and vanilla extract. Mix thoroughly.
  • Slowly pour the wet mixture into the dry ingredients and stir until well combined. If you're adding shredded coconut, fold it in gently.
  • Grease an 8x8-inch baking dish with a bit of melted butter or non-stick spray.
  • Pour the mochi mixture into the prepared baking dish and spread evenly.
  • Place the dish in the preheated oven and bake for about 45 minutes or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
  • After removing it from the oven, let it cool for at least 10 minutes before cutting it into squares. Serve warm or at room temperature.

Notes

For a deeper flavor, consider swapping out regular sugar for brown sugar. Olive oil can be used instead of butter for a healthier twist, ensuring it's Halal-friendly. Avoid overbaking to maintain the chewy texture.
