  • 1 cup broccoli florets Fresh or frozen can be used.

Preparation

  • Begin by boiling a large pot of salted water. Add the egg noodles and cook according to the package instructions until al dente. Once cooked, drain the noodles and set aside.
  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Cooking

  • In the same skillet, add the minced garlic and sauté it for about 1-2 minutes until fragrant, being careful not to burn it.
  • Pour in the chicken broth and add the broccoli florets. Stir, allowing the mixture to come to a simmer. Once the broccoli is vibrant green and tender, return the sliced chicken and drained noodles to the skillet.
  • Toss everything together until evenly coated. Taste and adjust seasoning if necessary. Garnish with fresh Parmesan cheese and serve warm.

Notes

To take your dish to the next level, consider using lean ground turkey or beef instead of chicken for a Halal-friendly option. You can also switch out the broccoli for your favorite veggies. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months. Reheat in a skillet over low heat, adding broth if the sauce is too thick.
