  • 1 cup orzo pasta
  • 2 tablespoons butter can be substituted with olive oil or plant-based butter
  • 3 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste Essential for flavoring the dish

Preparation

  • In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to the package instructions until al dente. Once cooked, drain the orzo, but make sure to reserve about 1/2 cup of the pasta water for later.
  • In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to let it burn!
  • Reduce the heat to low, and add the cooked orzo to the pot with the garlic butter. Stir gently to combine.
  • Add the lemon zest and lemon juice to the orzo, along with salt and pepper to taste. If the mixture seems too dry, add some reserved pasta water to achieve your desired consistency.
  • Stir in the grated Parmesan cheese until well combined. The cheese will melt, creating a creamy base for your orzo.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, place in a freezer-safe bag for up to a month. To reheat, warm in a pan over low heat, adding a splash of water or broth if needed.
