  • 1 cup Roasted red peppers Jarred or homemade, drained.
  • 1 cup Heavy cream For that rich, creamy sauce.
  • 2 cloves Garlic, minced To add depth.
  • 2 tablespoons Olive oil For searing the cod.
  • Salt and pepper To taste.
  • 2 tablespoons Fresh parsley, chopped For garnish.
  • 1 tablespoon Lemon juice To brighten the flavors.

Preparation

  • Begin by draining the roasted red peppers and chopping them into smaller pieces.
  • Mince the garlic and set aside.

Cooking the Cod

  • In a large pan, heat the olive oil over medium-high heat.
  • Season the cod fillets with salt and pepper.
  • Once the oil is hot, carefully add the cod fillets and cook for about 4-5 minutes on one side until golden.
  • Flip the cod and cook for an additional 4-5 minutes or until cooked through and flaky.
  • Remove the fish from the pan and set aside.

Making the Sauce

  • In the same pan, lower the heat to medium and add the minced garlic.
  • Sauté for about 30 seconds until fragrant.
  • Add the chopped roasted red peppers and stir well.
  • Pour in the heavy cream and stir until well combined.
  • Let it simmer for about 5 minutes, allowing the sauce to slightly thicken.

Finishing the Dish

  • Once the sauce has thickened to your liking, return the cooked cod to the pan, gently spooning some sauce over the top.
  • Allow the cod to warm through for another minute.
  • Serve the cod fillets on a plate, drizzled with the roasted red pepper sauce.
  • Garnish with chopped parsley and a squeeze of fresh lemon juice for an extra zing.

Notes

For substitutions, replace cod with halibut or tilapia, adjusting cooking times as needed. Always avoid overcooking by checking for flakiness. Allow the sauce sufficient time to thicken.
