Preparation

  • In a medium saucepan, melt 1 cup of unsalted butter over medium heat. Continue cooking until golden brown, about 5-7 minutes, stirring continuously to prevent burning. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine the browned butter, brown sugar, and granulated sugar. Whisk until well combined. Add in 2 large eggs and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
  • In a separate bowl, whisk together 2 1/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  • Gently fold the dry ingredients into the wet mixture, being careful not to over-mix. Stir in 1 cup of toffee bits and chocolate chips if desired.

Baking

  • Preheat your oven to 350°F (175°C). Using a cookie scoop or tablespoon, drop the cookie dough onto lined baking sheets, leaving space between each cookie.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden. The centers may look slightly underbaked; that's okay as they will continue to cook on the baking sheet.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Refrigerate for up to two weeks or freeze for up to three months. Reheat in microwave or oven to restore freshness.
