Ingredients
  

Chicken and Coating

  • 1 lb chicken breasts (boneless, skinless) Cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • Oil for frying Oil for frying (enough for a few centimeters in a skillet) Ensure oil is hot enough to fry

Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha Add more if you like it spicy
  • 1 tbsp soy sauce

Garnish

  • to taste green onions For garnish

Preparation

  • Start by cutting your chicken breasts into bite-sized pieces.
  • In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and soy sauce until well combined. Set aside a portion for drizzling over the finished chicken.

Coating

  • In a separate bowl, place the panko breadcrumbs.
  • Take each piece of chicken and dip it into the sauce mixture, then roll it in the panko breadcrumbs until fully coated.

Cooking

  • In a frying pan, heat about an inch of oil over medium heat.
  • Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry in batches for about 4-5 minutes on each side until golden brown and cooked through.

Serving

  • Arrange the chicken on a platter, drizzle with the reserved sauce, and sprinkle chopped green onions on top.
  • Serve warm and enjoy!

Notes

For a healthier twist, you can bake the breaded chicken pieces instead of frying them. Store leftovers in an airtight container in the refrigerator for up to 3 days.
