Cuisine American
- 1 ½ cups rhubarb chopped
- 1 cup granulated sugar
- ½ cup all-purpose flour
- 1 cup unsalted butter softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp salt
- 1 tsp baking powder
Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish with butter or cooking spray for easy removal later.
In a medium bowl, cream together the softened butter and ½ cup sugar until light and fluffy, add the flour and salt, mixing until the ingredients are just combined, then press the mixture evenly into the bottom of the prepared baking dish to create your base.
In another bowl, whisk together the eggs, remaining sugar, flour, baking powder, and vanilla extract, mix until everything is well combined, and toss the chopped rhubarb with this mixture.
Spread the rhubarb filling evenly over the crust in the baking dish, making sure to distribute it uniformly.
Place the baking dish in the preheated oven and bake for about 30 minutes, or until the filling is set and the top is lightly golden.
Once baked, remove the dish from the oven and allow it to cool completely before cutting it into squares and dust with powdered sugar for an extra touch before serving.
