  • ½ cup sour cream or Greek yogurt This acts as a base for the roll-ups.
  • ½ cup salsa Use your favorite salsa for added flavor.
  • ¼ cup fresh cilantro Optional, for garnish and extra flavor.

Preparation

  • Begin by gathering all your ingredients. If you're using cooked meat, ensure it’s seasoned to your liking.
  • Place your tortillas flat on a clean surface, like a cutting board or countertop.
  • Spread a layer of sour cream over each tortilla as the flavorful base.
  • Sprinkle shredded cheese evenly over the tortillas, then layer the meat, diced bell peppers, red onion, and fresh cilantro on top.
  • Tightly roll up each tortilla, starting at one end and securing everything as you go.
  • Slice each roll into bite-sized pieces (about 1 inch thick) and arrange on a platter.

Notes

For best results, allow the roll-ups to sit for a few minutes before slicing to help meld flavors. Store leftovers in an airtight container for up to 3 days.
