  • 1 cup chili (canned or homemade)
  • 1 cup shredded cheese (cheddar or a blend)
  • ½ cup diced onions
  • ½ cup sour cream
  • Hot sauce (optional)

Preparation

  • If you’re using canned chili, just heat it in a saucepan over medium heat. Stir occasionally until warmed through. If you’re making homemade chili, be sure to have it cooked and ready to go.
  • Heat the flour tortillas lightly in a skillet for about 30 seconds on each side. This makes them soft and pliable, perfect for wrapping.
  • Spread an even layer of the chili down the center of each tortilla. Sprinkle the shredded cheese on top, followed by diced onions.
  • Fold in the sides of the tortilla and then roll it tightly from the bottom up, enclosing your delicious fillings.
  • Place the burritos seam-side down on a skillet over medium heat. Let them cook for about 2-3 minutes on each side until they’re golden brown and crispy.
  • Cut the burritos in half and serve with a generous dollop of sour cream and hot sauce if desired.

Notes

For a dairy-free alternative, switch out the cheese. Use vegetarian chili for a different twist. Store burritos wrapped tightly in foil or plastic wrap; they can be refrigerated for up to three days or frozen for about three months. Reheat in the oven at 350°F (175°C) for 15-20 minutes if frozen, or in a frying pan if refrigerated.
