Main ingredients

  • 1 pound ground beef You can substitute with ground turkey or chicken for a Halal option.
  • 1 packet taco seasoning
  • 1 can refried beans (15 oz)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (cheddar or Mexican blend) Adjust cheese according to preference.
  • 1 package taco shells (usually 12)

Toppings

  • 1 cup shredded lettuce For garnish.
  • 1 cup salsa Choose your favorite type.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef, breaking it into smaller pieces. Cook for about 5-7 minutes and drain excess grease.
  • Stir in the taco seasoning and refried beans, heating through for 2-3 minutes before folding in the diced tomatoes.

Baking

  • In a large baking dish, break taco shells into halves and place them standing up at the bottom.
  • Pour the beef mixture into the taco shells, filling them generously.
  • Sprinkle the shredded cheese over the top.
  • Bake for 25-30 minutes until the cheese is bubbly and golden brown.

Serving

  • Let the Taco Bake cool for a couple of minutes before topping with shredded lettuce and salsa.
  • Serve and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a preheated oven at 350°F for 15-20 minutes.
