Dressing

  • 1 tablespoon fish sauce or soy sauce (for vegan option)
  • 1 tablespoon honey or agave syrup (for vegan option)
  • Salt and pepper, to taste

Preparation

  • Start by peeling and dicing the ripe mangoes. Then, chop the red bell pepper, cucumber, and red onion into bite-sized pieces.

Combining Ingredients

  • In a large mixing bowl, combine the diced mango, red bell pepper, cucumber, red onion, and chopped cilantro.

Making the Dressing

  • In a small bowl, whisk together lime juice, fish sauce (or soy sauce), honey, and sliced chili. Adjust the seasoning with salt and pepper as needed.

Dressing the Salad

  • Pour the dressing over the mango mixture and toss gently to combine.

Serving

  • Fold in the chopped roasted peanuts for an added crunch. Serve immediately, or let it chill in the fridge for 15-30 minutes to allow the flavors to meld.
