  • 1 pound fresh carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder or fresh minced garlic for more flavor
  • Fresh thyme leaves for garnish optional

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel the carrots and cut them into uniform sticks.
  • In a large mixing bowl, combine the olive oil, honey, salt, pepper, and garlic powder. Stir until well mixed.
  • Add the carrot sticks to the bowl and toss well to coat each piece.
  • Spread the coated carrots in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for 25-30 minutes, tossing halfway through.
  • Check for doneness; the carrots should be fork-tender and lightly browned.
  • For more caramelization, roast for a few additional minutes, monitoring to avoid burning.
  • Remove from the oven and garnish with fresh thyme leaves before serving.

Notes

To store leftovers, place in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or in a hot oven for a crispier texture.
