  • 1 medium sweet potato, peeled and diced
  • 1 cup rolled oats
  • 2.5 cups water or milk (dairy or non-dairy) Adjust for preferred creaminess
  • 1 tablespoon maple syrup Adjust to taste
  • 0.5 teaspoon cinnamon
  • a pinch salt

Preparation

  • Begin by dicing the peeled sweet potato into small cubes.
  • In a medium saucepan, bring water (or milk) to a boil.
  • Add the sweet potato cubes and let them cook for about 10-15 minutes or until fork-tender.
  • Once the sweet potatoes are tender, stir in the rolled oats.
  • Reduce the heat to medium and let it simmer for an additional 5-10 minutes, stirring occasionally until the oats have absorbed most of the liquid.
  • Add maple syrup, cinnamon, and a pinch of salt. Stir to combine and allow it to cook for another few minutes until it reaches your desired consistency.
  • Remove from heat and garnish with your favorite toppings, such as chopped nuts or a dollop of yogurt. Enjoy your warm bowl of Sweet Potato Oatmeal!

Notes

Sweet Potato Oatmeal can be stored in an airtight container in the refrigerator for about 3-5 days. To reheat, simply warm it up on the stovetop or microwave.
