  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter (or vegetable oil for a lighter option)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C). Peel and cube the sweet potato, then boil it until tender. Once cooked, mash it in a bowl until smooth. You’ll need about 1 cup of mashed sweet potato.
  • In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, melted butter, eggs, and vanilla extract. Mix well until all the wet ingredients are fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring just until combined. Be careful not to overmix; a few lumps are perfectly fine!
  • Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula to create an even surface.
  • Place your loaf in the preheated oven and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  • Once done, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Cut into slices and enjoy warm or at room temperature!
